This naturally processed Red Catuai fish roasted darker, but not too dark, and offers a juicy, slightly fruit-forward profile with dark chocolatey notes, honey-like sweetness, and almond nuttiness. Its medium body and bright, citrusy acidity create a balanced, smooth cup, while subtle spice notes add depth. The clean, fruity finish makes it a great choice for a variety of brewing methods.
