La Palma from El Salvador (wholesale)
This new year, we were looking to shake up our lineup with some rich, heavy, fruity, and complex natural processed coffee, and were won over by a microlot from Finca San Ignacio in northern El Salvador.
The producer, Edgardo, comes from a lineage of acclaimed coffee producers in El Salvador. Growing up on his father’s plantation, he learned the importance of meticulous picking and careful processing that goes into creating lots worthy of winning the Cup of Excellence competition 3 times. As a young aspiring producer, he started Finca San Ignacio in the same region as his father’s farm, where he plants only bourbon and pacamara.
In your cup, you will find notes of tropical fruit, molasses, and red wine, with a sugary undertone the whole way through.
Brew it as a sweet, fuller-bodied filter or as an espresso if you are looking for fruit funk.
